Q: If I send using one of these servers, will it still show as coming from my domain?
A: Yes. Your email address remains the same.
Q: Why should I use one of these servers instead of my domain's outgoing mail server?
A: To help prevent abuse, many providers restrict you from using mail servers other than your direct provider's. For example, Comcast does this. Also, in most cases, using one of the above servers will be faster, because they are close to you on your network.
